My Mama Always Told Me To Eat My Vegetables

When I was a child, my brother and I used to hide our vegetables under our plates so we wouldn’t have to eat them.  I was in charge of cleaning off the table and I would take my veggies from underneath my plate, put them in my napkin and dump them in the trash.  My mother, Orean Mason would say, “you can’t leave the table until you have eaten all your vegetables”.  One day, for some reason, my mother decided to clean off the table.  Well, let me just say that was the last time I threw away my vegetables.   Now, I not only know the benefits and nutritional value of vegetables but I think they are delicious too.  I always have them with every meal –  five times a day and I encourage my clients to eat them as well.
